Coconut curry chicken

Recipe from Mayotte island

For 4 persons

  • 1 cut chicken

  • 1 apple

  • 2 onions

  • 2 garlic cloves

  • 1 can chopped tomatoes (250ml)

  • 1 can coconut milk (150ml)

  • 100 ml natural yogurt

  • 2 tablespoons curry powder

  • salt

  • pepper

  • 2 tablespoon vegetable oil

  1. In a large pot over high heat, heat the oil. When hot add the pieces of chicken and cook until golden, 6 to 8 minutes

  2. Remove the pieces of chicken from the pot

  3. Chop onions, apples and garlic gloves

  4. In the pot over medium heat, add chopped onions, apples and garlic cloves

  5. Add curry powder, mix, wait 1 minute

  6. Add the chicken, 150ml boiling water and the can of chopped tomatoes

  7. Add salt and pepper, cover and let it cook for 30 minutes low heat

  8. Add coconut can and cook again low heat for 20 minutes

  9. Add the yogurt and cook again low heat for 10 minutes

Serve with basmati rice.
