Perfect summer time recipe. Healthy and tasty
30g pine nuts
100g rocket salad
2 small courgettes
salt and pepper
For the dressing
1 teaspoon Dijon mustard
3 tablespoons extra virgin olive oil
Peel and grate the courgettes.
Peel and dice the avocado.
Toast the pine nut in a frying pan on medium heat for 5 minutes (until brown).
Poor the grated courgettes, rocket salad, avocado in your serving plate, scatter the crab meat and the toasted pine nuts.
Mix all the dressing ingredients together add extra virgin olive oil and drops of water to adjust the consistency. Poor over the salad plates. Add salt and pepper to taste. Enjoy!
