Home made spinach and ricotta ravioli

Super tasty and so satisfying

For 2 pers

  • 200 g flour

  • 2 eggs

  • 150 g ricotta

  • 250 g spinach

  • 100 g parmesan

  • salt

  • pepper

  • nutmeg

  • toasted pine nuts

  1. Make a hole in the flour

  2. Mix the eggs

  3. Add the egg in the hole and mix it with the flour little by little until the dough is hard

  4. Move it to a work surface

  5. Add flour little by little until getting an homogenous non sticky dough

  6. Put it in a cling film

  7. Let it rest in the fridge for at least 15min

  8. Mix ricotta, spinach, parmesan, salt, pepper, nutmeg

  9. Spread the dough very thinly (1mm) only in one side. Make sure it does not stick on the work surface

  10. Put some of the ricotta mix in the dough

  11. Close the dough on top and form a ravioli

  12. Cook in salted boiling water until the raviolis move to the surface (around 3 min)

  13. Add extra virgin olive oil on top, grated parmesan, salt, pepper and enjoy! You can add toasted pine nuts.

If you have made some extra you can freeze them uncooked to enjoy later.
