For 2-3 people

1 aubergine
1 big tomato
2 crushed garlic cloves
1 tablespoon of chopped parsley
2 tablespoon of olive oil
1 tablespoon of lemon juice
Spices
1/4 teaspoon of salt
1/2 teaspoon pepper
1/2 teaspoon red chilli
1 teaspoon paprika
1 teaspoon cumin
Peel and chop the aubergine and tomato in small cubes
Heat a pan with the olive oil, add the aubergine and the salt
Cover and cook low heat for 10 minutes
Use a potato masher to mash the aubergine
Add the tomato, garlic, parsley and spices. Cook covering the pan for 20-30 minutes. Keep mashing the mixture from time to time
Add the lemon juice and cook without cover for 5 minutes or until the liquid evaporates
Serve cold with bread or crackers as a starter
