Moroccan aubergine salad

Full of flavours with a spicy kick. Great memory of a weekend in Marrakech...

For 2-3 people

Cooking time 35 minutes

Preparation time 15 minutes

  • 1 aubergine

  • 1 big tomato

  • 2 crushed garlic cloves

  • 1 tablespoon of chopped parsley

  • 2 tablespoon of olive oil

  • 1 tablespoon of lemon juice


  • 1/4 teaspoon of salt

  • 1/2 teaspoon pepper

  • 1/2 teaspoon red chilli

  • 1 teaspoon paprika

  • 1 teaspoon cumin

  1. Peel and chop the aubergine and tomato in small cubes

  2. Heat a pan with the olive oil, add the aubergine and the salt

  3. Cover and cook low heat for 10 minutes

  4. Use a potato masher to mash the aubergine

  5. Add the tomato, garlic, parsley and spices. Cook covering the pan for 20-30 minutes. Keep mashing the mixture from time to time

  6. Add the lemon juice and cook without cover for 5 minutes or until the liquid evaporates

  7. Serve cold with bread or crackers as a starter
