Peel onion, potatoes, carrots and turnips.
Wash the leeks and cut them in 4 pieces lengthwise. Cut them in 3 pieces across the width. Form 8 bundles tied up with a thread.
Stick the cloves into the onion.
Form a bundle with the thym, laurel and parsley tied up with a thread.
Put the meat in a big pot fill in with water. Add the onion and the bundle of herbs. Cook for 2h. Add the vegetables, salt and pepper. Cook for 1h.
