Delicious in spiced pulled duck bao buns or tacos
For 2 people
1 duck leg
1 cloves of garlic, chopped
small knob of ginger, peeled and finely chopped
1 star anise
½ teaspoon of black pepper
¼ teaspoon of five spice powder
1 tablespoon oil
40ml rice wine
50ml soy sauce
100ml of water
20g sugar
Chop the ginger and garlic.
In a dry frying pan, brown the duck leg until golden and remove.
In the same pan add the oil and add the garlic, ginger, star anise, black pepper and five spice powder until fragrant.
Add the rice wine, soy sauce, water and sugar, and let boil for 2 min. Finally add the duck and simmer with the lid on for 70-80 mins, until fall off-the-bone tender.
Take the duck legs out, remove the bones and shred the meat.
Over a bowl, sieve the cooking liquid. Check the seasoning and mix in the shredded duck.
