Spicy baby aubergine stew

Healthy and tasty

For 2 persons

  • 16 baby aubergines

  • 2*400g can chopped tomatoes

  • 3 tablespoon green curry paste

  • 2 onions

  • 2 garlic cloves

  • 2 carrots

  • 2 tablespoon sugar

  • 1 tablespoon olive oil

  • bunch of coriander and mint (optional)

  • salt and pepper

  • couscous to serve

  1. Peel and chopped the onions and garlic.

  2. Heat oil in a saucepan add the onions and garlic and cook until they begin to colour.

  3. Add the aubergines, the curry paste, the tomatoes and sugar. Mix well.

  4. Cover and gently cook for 40 mins, until aubergines are tender.

  5. Season the sauce. Sprinkle over chopped coriander and mint and serve with couscous.
