Fluffy pancakes

Perfect for lazy brunch over the weekend. Boyfriend's speciality

For 8 pancakes

  • 180 ml milk

  • 30 ml white vinegar

  • 125g all-purpose flour

  • 25 g white sugar

  • 5 g baking powder

  • 2 g baking soda

  • 3 g salt

  • 1 egg

  • 30 g melted butter

  • vegetable oil

  1. Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour"

  2. Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone

  3. Heat a large frying pan over medium heat, and coat with oil. Pour slowly 1 ladle of batter onto the frying pan, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side
