For 8 pancakes
180 ml milk
30 ml white vinegar
125g all-purpose flour
25 g white sugar
5 g baking powder
2 g baking soda
3 g salt
1 egg
30 g melted butter
vegetable oil
Combine milk with vinegar in a medium bowl and set aside for 5 minutes to "sour"
Combine flour, sugar, baking powder, baking soda, and salt in a large mixing bowl. Whisk egg and butter into "soured" milk. Pour the flour mixture into the wet ingredients and whisk until lumps are gone
Heat a large frying pan over medium heat, and coat with oil. Pour slowly 1 ladle of batter onto the frying pan, and cook until bubbles appear on the surface. Flip with a spatula, and cook until browned on the other side
