For breakfast, snack, salad or desert topping
3 cups of oat
2 cups of nuts of your choice (e.g pecan and almonds)
1/3 cup of olive oil
1/3 cup of honey
1/4 teaspoon of salt
1/2 teaspoon of vanilla extract
1/2 teaspoon of cinnamon
Preheat oven to 180 degrees Celsius and line a large, rimmed baking tray with parchment paper.
In a large mixing bowl, combine the oats, nuts, salt and cinnamon. Stir to blend.
Pour in the oil, honey and vanilla. Mix well, until every oat and nut is lightly coated. Pour the granola onto your prepared pan and use a large spoon to spread it in an even layer.
Bake until lightly golden, about 15 to 20 minutes, stirring halfway (for extra-clumpy granola, press the stirred granola down with your spatula). The granola will further crisp up as it cools. Keep in an air tighten jar for months.
